Apricot Pepper Bacon

Tonight I tried something new in the kitchen.

I had some leftover Apricot Pepper Sauce from our New Years party.

Bacon - Baking Bacon - Bacon in Oven - Bacon on RackI laid bacon strips on a rack in a baking pan while waiting for my convection oven to preheat to 400 degrees.

The bacon looked really nice when I took it out of the oven. I transferred the bacon to a paper towel covered plate to allow it to cool.

Then it was time to try out the bacon and see how it tasted. I decided to just pick up a slice and bite in.

The bacon tasted wonderful. The Apricot Pepper Sauce gave it a nice rich and tangy flavor.

Ham and Bacon Sandwich - Apricot Pepper Bacon - Ham and Swiss Sandwich I then decided to make a nice sandwich with the bacon. I had some Black Forest ham and Swiss cheese so layered it all together between two slices of Home Pride Wheat bread.

The Apricot added some nice notes of flavor to the sandwich. Something that I will definitely have to try again.

How would you use the leftover Apricot Pepper Sauce?
