Tonight I tried something new in the kitchen.
I had some leftover Apricot Pepper Sauce from our New Years party.
I wondered how bacon would taste if I cooked it with some of the Apricot Pepper Sauce.
I laid bacon strips on a rack in a baking pan while waiting for my convection oven to preheat to 400 degrees.
I then drizzled some of the Apricot Pepper Sauce onto the bacon.
I took a brush and spread out the sauce on the bacon. By that time the convection oven was ready, so I put the pan in the oven and set the time for 17 minutes.
The bacon looked really nice when I took it out of the oven. I transferred the bacon to a paper towel covered plate to allow it to cool.
Then it was time to try out the bacon and see how it tasted. I decided to just pick up a slice and bite in.
The bacon tasted wonderful. The Apricot Pepper Sauce gave it a nice rich and tangy flavor.
I then decided to make a nice sandwich with the bacon. I had some Black Forest ham and Swiss cheese so layered it all together between two slices of Home Pride Wheat bread.
The Apricot added some nice notes of flavor to the sandwich. Something that I will definitely have to try again.

Wow, that is really stacking it up: ham AND bacon and then the cheese. Sounds yummy.
