High Mountain Tea

Today was one of those days where I looked forward to getting home and having a nice cup of tea. As soon as I got home I put on the kettle and got ready to make some tea.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainThe first thing was to find the tea that I wanted. I had been thinking of High Mountain Tea, especially as I could better watch the brewing process with my new tea cup.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainHere is a tablespoon of Yu Shan tea. The tea is an oolong tea and comes from Jade Mountain which is the highest peak in Taiwan. It is one of the best High Mountain teas from Taiwan and can sell for upwards of $100 a pound. Thankfully this was a gift from one of my students, but I would pay this much as the tea is really good.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainThe Yu Shan tea is a full leaf tea. Here you can see the dried up leaves and that there are very few small particles. The tea is now in the filter and ready to add water.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainHere I have added the water into the tea filter. This is an interesting shot as the camera is focused on the rim of the cup. The rest of the cup is blurred, but this is partly because of the steam coming off of the water which has fogged up my lens.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainHere you can see that the leaves are opening up and releasing their goodness.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainHere is a top down view of the tea leaves and you can see that they have opened up.

Monday Tea, High Mountain Tea, Taiwan Tea, Yu Shan Tea, Jade MountainLook at the beautiful color of this tea. The taste was really nice as always. It is hard to describe the taste, except to say that it is delicious. By far the best oolong tea that I have had.

One of the nice things about full leaf tea is that you can brew multiple cups from the same leaves. I sometimes will make five or six cups before the taste starts to wane.

Oolong tea is good for stress, so was a very good thing to have after my day today.

Now for some sleep before another long day in the classroom tomorrow. I think I will be ready for another cup of tea when I get home tomorrow 🙂

Shelling Walnuts

Today we spent part of the afternoon shelling walnuts. I have shelled a few walnuts over the years, but not in this quantity.

Walnuts, shelling walnuts, walnut orchardAfter laying out newspaper on the kitchen table we poured out some walnuts to get started.

Walnuts, shelling walnuts, walnut orchardWe were soon whacking walnuts with hammers and removing the meat from the shells. The trick to shelling walnuts is hitting them in just the right place and using just the right amount of force from the hammer.

Walnuts, shelling walnuts, walnut orchardIf you hit the walnut too hard then you smash the kernel to bits and have a hard time separating the shell from the meat. If you use too little force it simply does not come apart. It took a bit of experimenting, but I was soon shelling at a good pace.

Walnuts, shelling walnuts, walnut orchardWe shelled a complete gunny sack full of walnuts in about an hour. We had a great time sharing stories while working, including holiday memories of cracking nuts. Finally we had bags full of nuts that are now ready for baking or simply snacking.

Walnuts, shelling walnuts, walnut orchardThe walnuts tasted really good and we ate a few along the way. I brought a couple bags home with me, so now have plenty of nuts to snack on.

How would you use shelled walnuts?
